The Brinjal, which is commonly known as the eggplant is a very common and affordable vegetable. Although the raw brinjal does not have an agreeable taste when cooked it becomes tender and develops a rich flavour. There are different varieties of brinjals. The most common variety is the oval shaped purple coloured ones. The vegetable is high in water content and is a very good resource of potassium. Brinjal is supposed to possess many medicinal properties although its not proven. It is still being used as a remedy for cancer, hypertension and diabetes.
